Low GI Carrot Cake breakfast Bar
Dry Ingredients
- 1 scoop Flavor and Fettle Vanilla Protein Powder (whey or plant based)
- 1 ½ cups almond or coconut flour
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp sea salt
Wet Ingredients
- 3 eggs
- ¼ cup maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1 ½ cups grated carrot
- ½ cup walnuts
- ¼ zested orange
Directions
- Preheat oven to 350 Fahrenheit
- Add dry ingredients into a large bowl and whisk to combine
- In a separate bowl add wet ingredients
- Add wet ingredients to dry ingredients and stir to combine
- Pour onto lined baking pan and bake for 25-27 minutes
- 8x8 pan yields 10 bars
